tsukemen: noodles (of varying kinds, this one thicker than ramen and nutty) dipped into a flavor explosion-bomb of a broth. oh and you can add those other things, but those in particular i could’ve done without.  except for the egg, oh japan and your perfectly cooked eggs.

dark, dark shoyu ramen. they recommended the thicker noodles, to hold up against the broth.

sabazushi, ajizushi, inarizushi, all atypical sushi for the states. sabazushi, a type of oshizushi (pressed sushi), delicate in flavor but hearty heft. the firm bite of the mackerel, slight sour-sweet tang. fresh inari for the inarizushi, totally unlike the sticky, high fructose corn syrup-laden skins from the canned variety.
